The way I see it, the size of the cabin has a lot to do with it.
Show me a pilot or FA who can physically see turbulence, know when it will impact the aircraft and with what severity, and I will agree with you.
It may take longer to secure a cart and move to a jumpseat in Y, but the difference doesn't change the risk at all given that the FA can't accurately predict when/how severe turbulence will be.
