It depends on the airline and it depends on the airport.

Asian base airline like to depart late night in US as when the flight get to asia it would be early morning, better connection to all the intra-asia flight. US base airline if they are going to asia they always choose a noon departure, as they had already got all the O&D traffic from other cities to their hub, the flight does not expect little to none connection traffic when it arrive in asia.

UA always have day time departure to asia.
CX always have night time departure to asia.
