They could have a model exit row and door in the gate area in the terminal (use old airplane parts to make it). The first time a passenger is assigned an exit row seat, the gate agent asks the passenger to demonstrate opening the door and exiting; then the passenger is marked as "exit row ok" in his/her FF account for a year or whatever.
