I agree. What's wrong with AMS? It's reasonably compact, given the volume (compared to, say, FRA), has great amenities (good food and bars, sleeping chairs, nice lounges, hotels, showers, pharmacies, adequate shopping, even a casino), and is easy to navigate, well-lighted, and clean.

I love CPH which, while not a major transit point, is a beautiful airport. I was in ZRH recently, albeit briefly, and it also seemed quite nice. I don't know if you consider IST in Europe, but it is also an excellent transit point.

MUC is great. I don't mind FRA as much as some people do; it's not too interesting, but certainly functional. Ditto for VIE.

All of the rest of the transit points I have been (CDG, LHR, MAD, MXP) are less worthy. But, in answer to the OP's question, I would say that a majority of the major hub airports are not terrible for tranfers.
