My suggestion is to sign up for an Air Canada Aeroplan account, and link it to your Amex account.

Find availability for awards using the All Nippon Airways website (you'll need an account with them, too)

And go about finding your seats!

With Air Canada the routing rules are very liberal, you can do two stopovers or a stopover and an open jaw, and you can cross the Atlantic or the Pacfiic (or one ocean each direction)

Call Air Canada Aeroplan, have them set up the award. Once it's ready, go online to Amex and transfer the points. They appear real-time. Issue ticket.

First Class is only 120k, so forget business...
