My question is how should I approach the planning and pricing of these three night trips? Eurail does not allow reservations beyond 60 days. We would much rather book in first class rather than coach. Should I consider a 5 day flexi pass or should I buy 8 tickets individually for each trip? Any help to finding the best deal would helpful.

City Night Line, e.g., for the Rome-Munich leg, permits reservations 92 days before departure. Go to the DB.de website rather than Eurail. There is no Munich-Prague sleeper, only day trains, but that trip is fairly short. Between Prague and Paris you have to change in Berlin or Mannheim to arrive in Paris on a sleeper. The first/second class distinction doesn't apply anymore on west-European sleepers, and the seats cars on these overnight trains are only second-class. The sleepers offer various bedding configurations, and the sleeper supplements for Eurail-pass holders vary according to which you choose. You can buy passes from Eurail, but you might look around for better prices (Eurail charges a lot for delivery and a whole lot for reservations). Just check the internet under "Eurail" for different companies' prices. For the passes you would need ones for four countries (including Austria), and they're cheaper for additional passengers (and for children), but you might do better with special sleeper deals (look at Db.de 92 days before departure). Eurail passes don't cover the Paris-London leg, but there is a discount on the fare for pass holders.
