I may be going out on a limb here, but I really suspect that few U.S. based airlines are going to attempt to satisfy the wine "collector"...

Also a wine collector, but modest at about 150 bottles (space limited). I find their domestic wine to be completely awful, and I don't even bother asking about it anymore. Their international wine in J on the other hand is usually completely acceptable.
Based on my limited experience with their wine on domestic, I usually find the wine bottles served to be in the $6-8 a bottle range, whereas their international J choices tend to be in the $20-30 (and there are many incredible wines at that price range).
I don't have much experience with other airlines first product, but I found BA's wine service for short-hop inter-Europe flights to be acceptable where I don't really find AA's domestic F product acceptable.
To each their own, maybe I prefer BA since they stock French wine, and I am a French wine fan, but cheap French wine in my opinion is considerably better than comparably priced cheap US wine which is likely why I can handle BA and not AA.
