I like MGM Grand for a first-timer immersion into the Vegas scene (I assume that since you're not a gambler or imbiber, you are interested in observing the scene and people-watching aspects).

The MGM is easy to reach from the airport via shared shuttle (about USD 8.00 plus tip), and it has good access to the Strip highlights via foot, monorail, and Deuce public bus.
To be honest, I was looking for something significantly cheaper than $USD 59 per night, although the location and dining credit offset some of that cost. Don't think I've ever actually stayed at a 4 star hotel.
I'll give it some thought, although the cheaper (ie. $24 for two nights at Golden Gate) options do hold a fair bit of appeal.
Might go for one of the cheaper hotels on the Strip instead (Stratosphere, Circus Circus).
