Anchorage to Fairbanks in late December?

My wife and I are considering a vacation in Alaska between Christmas and New Years this year. I was thinking about flying into ANC and staying for a day or two and then driving to FAI and flying home from FAI. We want to spend the bulk of our time around Fairbanks area to see if we can catch the Northern Lights.

We have never been to Alaska and we're looking forward to it. Would anyone recommend driving between Anchorage and Fairbanks in the winter time? Aside from snow and ice, if the weather cooperates, would the scenery be worth it? Any stops to consider along the way? The alternative would be to just fly to FAI from ANC - or skip ANC completely and just focus on FAI.

Thanks!
