You won't have to go through customs -- you're a transit passenger. Hopefully you'll get both BPs in Manila and check your baggage through to ORD, so at Seoul you avoid immigration, etc. and head for your next flight. An hour doesn't allow for your first flight to be more than a few minutes late, but if it's on time you'll be fine.
