The award level does not change while you are holding an award. That's the whole point- you "hold" the itinerary as-is until you can redeem. I did this recent and found it very easy to do on dl.com. Was a nice option to have while sorting out my plans for the trip, since I'm always so trigger happy when I finally find LOW BE tickets.
