While Tung Chung is certainly not ideal for being in the middle of the action, I agree with the previous poster that it is definitely easy to get to and from.
My only worry is that if you are out late at a bar/club, you might have some difficulty getting back to Tung Chung. However, this being HK, I'm sure there's a way with public transportation but it'll be up to someone else who stops by this thread to give you that specific information if you do indeed think you might be out partying until one or two (or much later) in HK.
In terms of finding a cool place to party,
Hong Kong Hustle is a great website that knows what's going on in HK at all times. Even if there's not something happening while you're in HK, browse through and make a note of some of the places where stuff has happened in the past. As for specific places, especially if you like electronic music and such, I'd recommend
Yumla. One of my good friends also swears by
Senses 99, although I've personally never been and they're only open on weekends. Barring all of that, just walking around Lan Kwai Fong/Soho and stopping into a place that looks like your kind of scene or vibe is also not a bad strategy. Most people would argue that in Lan Kwai Fong and Soho, English is the dominant language, anyway.
HK is a really safe place, as long as you mind your own business and don't have some horrendous luck. Enjoy your stay!
