These are all within the normal operating range of a 737-800, but as pointed out it's pretty thin margins for predicted weather + required reserves(*1). Offloading 2500lbs of luggage/people = 2500lbs more JetA on board, or about ˝hr more fuel. AS could aquire 737-700ERs to handle the job, but I really doubt we'll ever see 757s, or widebodies on the route. Even ETOPS 737-700s might be slightly better suited.

You can take the radical approach that WS has, for their YYC-HNL 3126 mi route. They don't sell the middle seats for the 1st dozen rows, and charge an extra 'WS 1st class' fee for a row with only 2 people.
Narrow body trans-oceanic flights are becoming more common. AC offered YYT-LHR on an A319 (not sure if they will this summer), BA of course fly JFK-LCY on an A318, and Privatair operate a number of long range routes (IAH-AMS for example) in 737-700ERs
