It's not so much what you do while you're in there, it's what you do when you leave. It's pretty rare that a disease can travel through unbroken, healthy skin (can you name one?), so touching stuff while you're in there is no big deal, just don't touch your face. While you're leaving and before you wash your hands: dispense the towels, wash, grab towels, dry, use them to dispense a few more which you use to turn off the faucet and open the door.
