There are things that save money, like UA packaging each blanket seperately so those that are unused can be simply recycled for the next trip. I find that doing away with the blankets and pillows appears to save little and degrades the overall product.
CO could always rent them for a $1 outside the plane if people wanted them and they could leave them on the plane after use. I suspect that would cut down on the number needed for each plane by at least 50-75%.
AH, yes, lets save 2 pennies to kill another dolphin with unnecessary plastic! brilliant thinking of typical American business.

I'd much rather forgo the pillow, If I want to sleep, I'll bring my own.
