Yes, doing away with the pillows is a cost saver plus it allows us to turn a plane faster if we don't have to change or replace the pillows at every stop.
It's amazing how Skywest can provide pillows for coach including E- and United and Skywest has blankets and pillows for F on all their flights (at least the ones I've taken), but CO can't even provide pillows for F.
There are things that save money, like UA packaging each blanket seperately so those that are unused can be simply recycled for the next trip. I find that doing away with the blankets and pillows appears to save little and degrades the overall product.
CO could always rent them for a $1 outside the plane if people wanted them and they could leave them on the plane after use. I suspect that would cut down on the number needed for each plane by at least 50-75%.
