Not sure of the last time you have been in Redmond or Bellevue, but actually there is quite a bit to do (new restaurants, shopping, bars, clubs, wine shops, etc.) and no paying for parking unlike downtown.
As far as where to stay - I would stay in Redmond at either the Residence Inn, Marriott, or another hotel but that's because the traffic is really bad coming and going from downtown.
I am there at least once a month and I lived on the east side for 14 months. Agree with you about the new dowtown Bellevue (you can never convince there is anything remotely exciting about Redmond) but its definitely not Seattle and a ghost town after 9pm.
