Any updates on vegetarian dining in Vegas?

I looked at a bunch of menus for the fancier on-strip, in-resort places, and most of them didn't have any vegetarian entrees at all. The exception was Michael Mina in the Bellagio, with a highly reviewed vegetarian tasting menu. Are most of these other places usually willing to make something off-menu?

We'd prefer to stay on the Strip, though I've heard Lotus of Siam is amazing (but will be closed when we're there!).
