Scenic Rail Journeys in Japan

I'll be arriving into Tokyo on Dec 23 and so far I haven't planned out my itinerary beyond that. I love riding trains so I'm planning on getting a rail pass. Are there any particularly scenic journey covered by the rail pass that I should do? I love riding trains enough that a couple day loop of all train riding would be fine with me

One bit that caught my eye off a tripadvisor post was:
The route along the Japan Sea from Amanohashidate to Kinosaki (and beyond, really) is incredible; you can make a one/two day loop (depending on timing and pacing) from Kyoto up to Amonohashidate, and across to either Kinosaki or Tottori (or, as I said, further; the whole coast in that region is beautiful) and then down to the main Shinkansen line that runs along the inland sea.
