With respect to YYC connections to YEG: It generally takes an hour to clear customs, immigration and get bags, so really there is only an hour-and-a-half for the connection to YEG. And YVR is always an alternative to get to HNL, and connections can be shorter there.
As for late night YYZ-YVR flights, if there is little full-fare demand, why should AC lose money flying a route that doesn't generate a profit when the aircraft could be better deployed serving more people and making a profit?
AC knows what traffic there is, and unfortunately not many people appear to want to leave the US late afternoon to fly to YVR. While I agree they should try and meet customer needs, it is silly to get upset because they cannot serve everyone 100%.
Isn't there a new non-stop JFK-YVR AC route? And there is a similar late night on CX and I believe AA, so if you are in BOS this is an alternative in addition to the UA suggestion.
