I'm not sure if there is some UA policy on this or not. But I heard the purser on a flight from HNL say just that. "You can switch once during the flight, no more than that."

I have a similar situation on way back from OGG next month. Not my boss though, but SO. I'm leaving it up to him - he can either have the F seat or we can hopefully make the person sitting next to him in E+ happy by giving them the F seat. Only 1 F for sale right now, so the upgrade definitely won't clear for him.
