Did market research tell them calling it a "bistro" might be laughed at?

Yes, I am being sarcastic...but not really....how did market research help to arrive at any of these decisions?
I tried the CY at ORD.

The "Bistro" was staffed by one person, who was taking orders, preparing the meals, and working the register.

While the young lady was doing her best, overall service was horrible.

Food quality was average or lower. Best I could tell, if it couldn't be pulled out of the refrigerator, or warmed in a microwave or mini-oven, it was not on the menu.

No true restaurants within walking distance, other than the restaurant at the Hilton Garden Inn next next door... where I will go next time.
