I understand charging more for a 3rd person when its a 1 bed room or 5 when its a 2 bed room, but I don't think this is really fair.

Also, what happens if I book "1 person" and two show up? Will they know? or care? if we tell them at check in that we "added someone" what will they do?

Also, I'm booking a room for my parent's anniversary, on my AMEX surpass credit card and with my Hhonors points. Anything I should do to ensure they won't have difficulty and that I'll get all my points?
The hotels are allowed to charge as they want. Hampton's are excluded from the spouse stays free under Honors.

Your parents won't have any problems with a room that you've booked for them using points. Make sure and give them a print out of the reservation and certificate for check-in. There's a good chance that they will need to provide a credit card at check-in. If you use your card to guarantee the room, which is all the card is doing, the hotel may not accept that for charges since your parents will not be able to produce the card nor authorize charges on it at check out.

You should not be getting any points or stay credit for your parents' stay unless you will also be occupying a room in the hotel at the same time and put both on one folio under your name. In that case you can get points for the second room but not stay credit. You are entitled to points for your personal hotel stays and one additional room. You are not entitled to stay or points for someone else's room when you don't stay.

Both of these are clearly stated in the HHH terms and conditions.

Some people do manage to get points and credits for other peoples stays. Some hotels are less stringent in following the rules than others.
