You can avoid the change fee by going to MSY and flying to IAH. If you miss your MSY - IAH segment, the entire trip will be canceled and the value forfeited. Dropping the MSY - IAH segment constitutes a change and the ticket will be issued in the lowest fare bucket available which, as you mentioned, is significantly higher than what you already paid.
