You basically have two choices:

1. You just book the flights with dummy dates and change the dates for free later.
2. You book those flights as open segments which can also be turned into proper flights for free later on.

Just make sure you don't do a no-show when working with dummy dates.

Also note that when departing in J from the UK you will be up for a high APT of GBP 100. Can be avoided when transiting.
