The airline would no longer be prospering if they are heavily relying mostly on local people. You have to keep in mind that westerners make up a large portion of CX's premium paying passenger market.
BTW I am one of those rather skinny "HK people" you are referring to and I have massive complaints regarding the narrowness of the seats. I can just imagine the discomfort those bigger bodies (Western, Asians, or others) will face on the seats. As a matter of fact I have seen them on my flights.
