AFAIK saver awards work just like normal fares: SFO-MEM-MSY can be sold cheaper than SFO-MEM, for instance.
The fact that you can find DEN-LAX for cheap miles and that you already have a cheap LAX-SYD does not necessarily mean that a DEN-SYD saver is available at all.

Have you considered booking separate awards (domestic+Australia) ?
