Differing opinion...

Taking 81 to 80 will add at least 10 - 20 minutes to your trip. I'd take 17 all the way to I-87 (NY State Thruway). Please note that some sections of 17 between Bing and the Catskills are 55 mph, and the NY State Police patrol this road.
I might add that there's no traffic on these roads, vs 81/80.

While it seems faster to go your way, IMHO, you'll be adding time to your trip.
