Sounds to me as though you want to move further afield rather than go to yet another North American/Mexican/Caribbean resort, so how about Four Seasons Resort Carmelo in Uruguay?

It has a great Championship golf course, a terrific kid's club, riding, striking riverbank views (and a sort of 'beach') and a very large pool. The spa is excellent.

Although the 'suites' are more expensive, the front-row bungalows are much, much nicer, which brings the stay into your price bracket.
