From what I saw on a pair of recent CW flights, they (the crew) put down the screen between passengers & left them down for the duration of the meal service.
I've had both - FA putting screen up again after passing through trays etc, and not. Also had FA asking to put it up, but as I'd previously been chatting to the lady in the other seat we told him to leave it down. (Most other flights to and from Asia the loads have been low enough that there hasn't been anyone there in any case.)
