You should be fine buying tickets for the trip to Kanazawa on arrival at KIX.
Take Haruka train to Shin Osaka and transfer there onto the appropriate express to Kanazawa (Raicho or Thunderbird express - depending on the time).
BTW - You could save a few pennies at the airport by buying a "JR West Rail Pass - Kansai Area" for one day (YN 2000). This pass will cover the Haruka train (but not the subsequent express to Kanazawa). It offers a small saving, but you might decide it's not worth the hassle.
