I would guess that this would be up to the property or checkout clerk to decide. My own experience on paid+award stays is that often a separate portfolio is opened for each segment (award or paid), and charges accumulate accordingly. Upon checkout, the clerk has to do some computer magic to merge the portfolios and transfer the charges. So, any credits (i.e. DELISH) may or may not get fully deducted depending on how they handle it. Of course, there have also been times where they've managed to keep me on a single portfolio, too. In both cases, on occasions when I've had F&B credits, they've honored the full amount even if spread over award days. In a couple cases, the check-in clerk just went ahead and posted a full credit immediately upon check-in, showing on the portfolio along with the deposit. But again, I suspect this is subject to whatever the local property wants to do. Suggest you get something in writing from hotel, and/or name of employee who confirms DELISH is usable, if you are concerned.
