As with anything mechanical, issues can arise. That is part of life and considering you got 5k miles I don't see why you are asking for more.
How about you justify why you think it is not enough.
If that is mechanical, the airline will have to bear some responsibility. In this case, they should provide some food and drink (catering, food voucher or cash) while passengers were waiting. Perhaps they did already. It is unlikely to have transit passengers for PEN, but if there is any, they should also be accommodated. However, the airline's responsibility is indeed quite limited.

I am lucky. I seldom ran into such problems. It happened to my family two years ago. We were flying MCO-MIA-SFO. The MCO-MIA flight went tech, and was delayed for three hours, and we missed the MIA-SFO flight by about 10 min. We went to AA's lounge (at that time the Admirals Club) and they arranged everything for us - the flight out the next morning (and we got good seats), food vouchers, and hotel. This is pretty much the limit of their reponsibilities.
