I booked in first class. The ORD - NRT segment was already in U because there was no F availability. I was ok with that because it was going to be my first time in the upper deck on a 747.
Since then, the equipment was changed to a 777. Still in Business. Then the HKG-MEL flight was also changed from a 3-class 747 to a 2-class A-330, so I was downgraded from first to business.
At this point, I only have the NRT-HKG and SYD-LAX-ORD left in first class. It's starting to look less and less worth the extra 80k miles for 1st.
Do I have a chance at all of moving the entire itinerary to business and getting my 80k back?

If you mean "moving" as in just swapping booking class on a couple segments, then no. What you envision would instead be a ticket re-issue, paying the redeposit fee and redeeming for Business instead.
I think that with involuntary downgrade he might be allowed to redeposit the miles without paying the fee. If he does that, the big question will there be U inventory to rebook the trip in business class.
