I can also add a vote for Metropark Causeway Bay (Parlour Suites) from a stay in 2007. Wish I had known about the downstairs breakfast option then (club lounge breakfast is not absolutely dire, but not great either)!

A 7 night 'long stay' package from the hotel website is at a good discount, but I suspect will not apply to you as you are doing it in two separate stays.
