I stayed at the Hamaca in April this year.
It is all inclusive, but they have plenty of extras that will cost you...like the motorized watersports, ping pong, pool. Even some restaurants onsite are not part of the all-inclusive. For the restaurants that are part of the all-inclusive you have to make reservations. The huge buffet is the only one where you can just show up. Otherwise there is the bbq/hamburger bar at the beach, and the pizza bar, and a lunchtime pasta/salad bar also at the beachside.
There are two areas of the hotel, the beachside one and then the area behind the street that divides the areas. At checkin you might try to negotiate beachside rooms. We did this and were happy with the rooms and balconies overlooking the beach.
The crowd at that time was about 75% French, 20% American (mostly New Yorkers), big mix of types from families to young couples. At 3 pm everyday the chocolate friends come out and start the day activities on the beach. There's plenty to do other than swimming and tanning.
No, not everybody likes the all-inclusive concept. It was my first time at one and I had a good time. It's hard to explain the environment. A little bit like a college frat party on the beach, but if you don't participate you won't notice it as much and you won't feel bad that you're not participating...if that makes sense.
