Tools | Options | Mail Format | Stationary & Fonts | Personal Stationary and make sure that the fonts listed there are of the correct size/typeface that you prefer.

I'd also check the display preferences as it sounds like it is not necessarily specific to Office. Minimize all applications and then right-click on your desktop and choose properties. Click on the Settings tab then the Advanced button. Make sure the DPI setting there is "96dpi default."
