I think you need to tell us more about your preference so that we can recommend suitable hotels. First thing first, I think you need to ask if the two of you are more city loving people or more nature/resort loving? If more of the former, I suggest you can skip Bali. I personally don't find Bali that exciting besides the view, which I got bored quickly after 2 days, and getting around is a hassle due to slow traffic and wasting time on the road. And it's hot and humid too. HK for me anytime.

As for food, the variety in Hong Kong is enormous. So just be adventurous and try out new things.

P/S : Yes, the lobby at Peninsula hotel is swarmed with tourist ( I was one of them ) Basically this old hotel is a tourist attraction. People come here to soak up the atmosphere. I haven't stayed there before but have toured the rooms and are not that impressed. Cannot say much about the service but I suppose it must be great since lots of people testify to it. In Hong Kong, I prefer the Four Seasons. Impeccable service and great food too ( though expensive ). It's really down to what you like.
