My vote for Steaks with a KC atmosphere - Hereford House, Golden Ox, the Savoy. Plaza III is a little more "fine dining." But why would anyone with only one night in KC going to a Royal's game not going to Arthur Bryant's, (Gates on the Paseo if pinched for time)? I know the OP said some ridiculous thing about Memphis ribs - does Memphis even have barbecue?
