3) The official website gives 2 options for transfer: moving walkways (11 mins walking time) or the bus that's supposed to go every 6 mins (last time I took it it wasn't close to as frequent as this). Which is faster? Bear in mind that' I'm an insanely fast walker and usually when a site gives a walking time I can halve it
5) How does the time of day / day of week impact security lines? I'm Trying to make a 14:35 coming off a 13:05 arrival. It's a Saturday
6) Any chance of the rumored/planned EI move to T3 being done by the 28th of August?
I can't answer all of your questions, but;

2) No - T5 is exclusively BA, and before T5 opened there was only 1 BA route in T3 (MIA). Now there are several shorthaul BA routes in T3. However, some airlines (eg. UA) have moved terminals, but T3 is as busy as ever.

3) The moving walkways underground are landside, so if you're staying airside, then you'll use the transfer bus.

5) Saturdays are busy all day.

6) Practically no chance - this move will probably occur after the non-aligned and SkyTeam airlines in T3 move to T4 and the BA/QF T4 flights move to T3.
