You would want to stay in Kowloon, to view Hong Kong island. Two hotels that I stayed in have rooms facing the harbor, the IC and Shangri-la in TST-East. Not stay at but know they offer some view rooms: Sheraton Kowloon, The Pen; and the lowly next door neighbor to The Pen is the YMCA TST. I am sure there are plenty others. Oh, yes, the new W.
While in Hong Kong, don't rely on taking picture just from you room. Thousand of good spots for photography outside! The entire city is a giangantic photo-op. Bring a tripod and go out at night (Ave of the Star in TST; the Peak and many other places). Note that many buildings on the island turn their lights off at 11:00pm sharp.
I just did a photo trip in Hong Kong last week.
