You get the time back when you cross the date line the other way, coming home. Isn't Fiji as close or nearly as close to LAX as, say, San Juan or Barbados? Now, if you all just don't want to go west, that's fine.

Don't really have any suggestions from personal experience, as I've never looked into luxury all-inclusives in this hemisphere. You might consider the three amans-- one in the Caribbean, one near Jackson Hole (might be spectacular in winter), and the new one in Southern Utah. A friend did Blackberry Farms in Tennessee last year around Christmas; great for foodies with an unbelieveable wine collection heavy on US wines; I believe it was all-inclusive except for alcohol.
