Generally,the HI suites don't have a full kitchen. Many have no ovens or burners. I have also been in many of them that had no utensils,dishes,etc. The last one I was in only had plastic glasses. But they all have full-size fridge,microwave and sink.
ES's usually have sink,small fridge,and micro (often small).They,however, have full breakfasts and a social "happy hour" (weekdays).
If you go with Homewoods you'll get what you're looking for.Many of them have good (not as good as ES) breakfasts and sometimes decent food (I've made it my dinner many times)at their social "happy hour".
