speaking of ETOPS, wouldn't a flight like ORD-PEK technically not require ETOPS? I just flew on a ORD-PEK nonstop with United and I think we went over maybe 60 miles of water crossing from Alaska to Russia (which is about 5 minutes of flight time). I remember we flew north over canada, over alaska, into russia, into china, never crossed any water except for the bering strait.
