Hello from a newbie to Delta (so please don't bite, and yes I have tried reading through the FAQs

... my partner and I are travelling GLA-AMS-MSP-BJI and return on KLM and Northwest / Mesaba operated flights around Christmas time (every segment booked in T). We booked with the Delta call centre (routed via the UK phone number) because delta.com didn't like my British Mastercard. Our itinerary is all online and correct.
However it doesn't seem possible to select seats or meals... the itinerary on delta.com simply says "Not Assigned" with no link or option to select a seat. Will seat selection only be available at check-in? We need to specify a vegetarian meal for the AMS/MSP legs.
