It depends where you are. In Tel Aviv, most shops shut down at Friday afternoon but cafes, restaurants and bars remain open.

In Jerusalem, most of the city shuts down but there are still some spots where there are some restaurants that are open on Shabbat.

There are many shopping centers that are at least partially open on Saturdays - mostly out of the major towns. Most of the museums and parks - even in Jerusalem are open on Saturday.
