CanuckFlyer's experience is fairly typical for departures at TLV. Whilst the security may look interested in what you're telling them, they actually couldn't care less and had forgotten it all 10 seconds after you left them. What they're interested in is the way you responded to their questions. They're interest is in your behavioural reactions.
It is true that it worth having documentation to substantiate what you did in Israel, but it isn't the most critical thing. They're looking for inconsistencies in what you might be telling them.
On the whole the experience is not unfriendly and they're usually very courteous.
