Subjectively, flying long distance became easier with kids when they were able to entertain themselves and communicate with you (crayons, IFE, books, 1000+stickers).
My oldest daughter is now 7. She is beyond the crayons / sticker phase. Pretty self-sufficient on the TATL flights. However, she can no longer fall asleep whereever/whenever, so she on JFK-LHR, she managed to stay awake waaay too long. About 20 minutes after she finally fell asleep, breakfast service started = one cranky child for the next 36hours. When she was < 3 years, there was virtually no jet lag.
I agree, as with all other situations, the challenge changes rather than diminishes.
Currently our little boy is in to trains and planes so the journey is fun and full of questions. Add a few books, stickers and the odd snack and he can handle a 2 hour flight.
That's his limit at the moment however.
