According to seatcounter.com (assuming OP does not have expertflyer, KVS, etc.), the several days in August I plugged in for the JFK<>YVR legs are wide open (almost all the classes show 9+.) Given OP did not provide the specific days of his trip, this is all we can do right now.
YVR<>HKG and JFK<>HKG direct are of course another story.
From JFK --> YVR the plane is virtually deserted, so you can find a nice middle aisle and lay down for 6-7 hours of sleep. But for YVR-HKG the plane will be full and from the looks of it it's virtually always overbooked, and I see a lot of happy people being upgraded to J or sometimes even F.
I used to buy only JFK-YVR-HKG in hope that I would be op-up, but I guess there are tons of DM and GL ahead of me because I never did, so I switched to direct flight instead. Also, it could be that they would op-up people from YVR-HKG instead of JFK-YVR.
There was a rumor in this forum that Cathay is thinking about canceling YVR-JFK route due to low frequency, but so it seems like it's only a rumor.
