A day in Dubrovnik (another each in Split, Rovinj)

Any other ideas? I've clipped the information here and in other threads.

We will be on a one week cruise (small ship) that will single days in Koper, Slovenia as well as in Croatia: Rovinj, Split and Dubrovnik, the first full week in August.

Our preference is not to take the overpriced ($149 - 199 per person 4 - 4.5 hours) ship's tours but rather to head into town early and do perhaps the most touristy things before it gets too crowded (e.g. city wall in Dubrovnik,) show up toward opening time at a selected restaurant (we've checked those recommended in the appropriate thread, and like seafood,) see how much more there is to do given the crowds and heat, and head back to the ship.

We enjoy walking and can deal with phrase-book local language, and assume the usual annoyances (pickpockets and some shills, potentially abusive cab drivers and the occasional con artist, at least if it's a serious tourist destination. )

We'll be in

Rovinj: 8:00 AM - 5:00 PM
Split: 9:00 AM - 5:00 PM
Dubrovnik: 8:00 AM - 11:00 PM

All recommendations / suggestions welcome.
